Breakfast of champions! I really need to work on my photo skills as this does not do justice. It’s mango overnight oats with vanilla chia pudding topped with blueberries. The chia pudding is just chia seeds, vanilla bean paste, a little maple syrup and kefir for some good gut bacteria. The mango overnight oats are self explanatory- just mango and oats blitzed. You can add some banana if it needs some sweetness. I heated the blueberries just enough so they explode with sweet purple juices 🥣🌱💜💚💛💪

Fact: If you chop up your kale into tiny pieces, you’ll not only enjoy it more, but you’ll also eat more of it 🌽🌿 . I can’t get enough of avocado in my salads this week 🥗. Here I generously tossed-in chopped kale, corn, heirlooms tomatoes, black olives, chia seeds, avocado and blistered it with shishito pepper dressing 🌶 + a slice of whole grain bread on the side 🥖 . Today for my breakfast I made this fantastic dark chocolate mousse! I blended 1 banana 🍌, 1 avocado 🥑, 1/2 can coconut cream 🥥, 1/2 dark chocolate (I used one from @valrhonausa), 2 tablespoon chocolate powder 🍫🍫. Cutting out junk food doesn't mean you have to cut out yummy snacks too! I use to love Lara Bars, especially the Choc Chip Peanut Butter ones. I will still sneak one when we are on the road, but when at home, I like to make my own. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ They don't have to be complicated, and mine generally depend on what is in the cupboard. These have a base of dates, shredded coconut, and some nuts. Then I add some other flavors depending on what I feel like - maybe some powdered ginger, or a splash of maple syrup. I make the mixture, then form into bars and store in the freezer. keeping the heat outside! 🔥🌱🥘 chicken thighs (boneless grilled on one side, bone-in skin-on seared skin side then heat turned waaaaaay down), shrooms cooked in chicken drippings, all the greens from our garden (kale, kohlrabi, chard, dandelion, lambs quarter, broccoli leaf), caramelized onions buried underneath, few glugs of hard cider in the trusty cast-iron on the trusty grill... w halved & grilled potatoes... plenty of extras for future meals!

🍃If you, like us, are trying to do what you to minimize #food waste but are not sure what to do with all these leftover bits & pieces? 🤔 • 🍃Well, the short answer is - don’t immediately bin it! In the SSH kitchen, we try and keep all of our vege off-cuts in a ziplock bag in the freezer and use them when making stock and broths. The broccoli and cauli stems get blitzed up into our pestos and pasta sauces. Celery leaves go into smoothies..... • 🍃The very last of the leftovers then make it to the worm farm for them to put to good use🐛🐛 Tonnes of fresh food makes its way into our landfill every day and there is so much we can do with it before it gets to that point. Simple dinners like are my favorite✨ . I realized tonight I’ve had either salmon or sardines everyday for at least a week. Tonight’s dinner a Jerk Chicken Tofu Bowl. Base is spinach, arugula and an awesome microgreen mix from @sprouted_earth, i used the jerk marinade we made in our cooking class last week on sprouted tofu. Also added mango, snap peas, quick pickled radish, roasted broccoli and quinoa. I used my favourite super simple dressing which has only 3 ingredients flax oil, apple cider vinegar and sea salt. Celebrating Taco Tuesday with these Shiitake Mushroom and Bell Pepper tacos 🌮 🌮 🎊 I actually made these last night, and they were so good that I’m making them again. I sautéed the mushrooms and bell peppers in @thrivemkt coconut aminos and cumin till soft. Then placed them on a @sietefoods almond flour tortilla, sprinkled on nutritional yeast and cilantro. ➡️ Rice with wok veggies, our basic glutenfree vegan dish. . I don't know about other people who are doing plantbased and gluten free, may be they really did eat a lot of fancy food all the time. . Me here eat more or less like what I have in hand or in season, and match them with some carb : Pasta, potatoed, rice or quinoa and stuff. . Sometimes we eat fancy food, sometimes easy simple thing. Dinner with boulghur, grilled tofu and stuffed peppers. Finalmente si torna a cenare in terrazza (e non al fresco artificiale del condizionatore) in compagnia di tuoni e lampi ⛈. Non me ne vogliano i vacanzieri e gli amanti della tintarella, ma questa giornata di temporali, grandine e vento fresco mi è proprio piaciuta. Un pò meno hanno apprezzato le mie chiome, che oggi hanno visto le forbici e provato l'ebrezza di essere lisci per poche ore. Day 16. Eating all the veggies and drinking all the green smoothies!! 🌿🥑🥦💚🥗 Orange ginger asian salad: massaged kale, shredded carrots, red bell pepper, cut snap peas, tofu, green onion, sesame seeds and orange miss ginger dressing. Dressing: Juice of 1 orange 1/2 avocado 1/4 cup rice vinegar 2 Tbsp miso paste 1-1/2 Tbsp tamari or aminos 3 dates 1/2 tsp fresh ginger 1 lg garlic cloves Water to thin, if needed Because some people were asking "massaging" your kale helps it to be not as tough, hard and chewy. I take a large bowl and fill it with lukewarm water and some baking soda. I put my kale leaves in there to soak/wash and I grab and squeeze to massage them... Maybe five minutes or so... Then rinse and spin dry.👌😅 It really does help.
