From this afternoonโ€™s foraging adventure: Asparagus officinalis, commonly known as asparagus. In most places, the tender shoots can be found in the early spring close to the prickly adult plants. They can be harvested by snapping them off the plant just above where the stalk gets tough. Every summer we as kids would board the train to embark on a 36 hrs journey ...changing 3 trains to reach my grandma's house. The highlight of my one month long vacation was food. Casually chopped veggies, a pinch of this and a smidgen of that, a dollop of ghee and hot steaming rice and lentils and we would be licking our fingers and bowls.I had no notion of how my grandmother made shopping lists or had the vegetable vendor, grocer, and the man Friday fill her orders. I had no idea how tired she was and how tiring her life. All I knew was that there was never any lack of snacks or sweet treats .I would carefully watch her create magic in the kitchen and though I never got a chance to cook till I got married....I turned out to be a mean cook .Am so proud of the fact that I cook with my senses...never a book. She schooled me, not by any dictum, but by the selfless, generous way she lived her life. Nani would have been so proud of my cooking had she been alive. All she saw was a tomboy tearing around on the dhobi's cycle or coming home with a black eye and bloodied knees! Today I made Mirchi ka salan and my friends were licking their fingers. Salad goals. Endive is mildly bitter, it adds texture to both cooked and raw dishes. Great raw in a salad with fruit , cheese and pickled onions or stir fried with garlic and topped with cheese. I added jalapenos, orange segments, feta , olive oil, black olives , toum, fresh lime juice and some orange juice. part of the Ayurvedic protocol Iโ€™m on is to help reset my digestion to make sure Iโ€™m absorbing my nutrients (the struggle is real, yโ€™all). that means white rice, but not brown and any meat or poultry I eat has to be ground (did that kind of rhyme?) so I tried this one tonight: ground chicken browned in a pan with onions and peppers with salsa verde and spanish rice. next time iโ€™ll make sure the salsa verde doesnโ€™t have jalapeรฑos in it as Iโ€™m avoiding spicy for a bit as well. ๐Ÿ˜ญ btw, our quick n dirty spanish rice was just white rice in the instant pot w chicken stock + a bit of tomato paste. ๐ŸŽ‰ at Brooklyn, New York
