People say that breakfast is the most important meal of the day. I have that awful habit of almost never eating it, but when I do, you can bet it's a #whatsinthefridge affair. There's been a light rain, a small drop in temperature (I actually slept with an additional blanket last night!) So when I woke up to a moody overcast morning I knew a gooey breakfast was in order. Forming in my head was a battleplan for a frittata.
I beat some eggs, mixed through leftover potato and onion soup (it had thickened up really nicely overnight,) parmesan, seasoned with salt, pepper and a good tablespoon of ground bottarga. Put mixture in an oiled pan that was on a medium heat. Slowly, gently cooked, turning pan when heat distribution was uneven. When the edges and centre look like they had firmed up a little, I topped with cheese and seasoned breadcrumbs I had in the freezer from making schnitzel. Put under the grill until the cheese was gooey, the top was crisp, slightly browned and the centre fluffy.
Im not sure I'll ever be able to replicate this again. But I will try.
