Here’s a recipe from my New @Whole30 endorsed cookbook, out in 30 days. It’s my Everyday Greek Chicken. There’s a version I adore from a wonderful little family restaurant in Chicago called The Athenian Room, whose food is so satisfying and delicious. I wanted to make my own version of this for weeknight eating. The recipe starts with chicken halves, which are often on sale. Get your oven hot, and after rubbing with a little bit of olive oil, salt and pepper, broil the chicken halves till crispy. There’s a fantastic Magic Elixir combination of olive oil, red wine vinegar, and garlic. Once the chicken comes out, potato slices go back into the oven. Once they are browned, add the chicken back, pour the sauce over, and let it sizzle. This is one of those dishes I could eat every day—so satisfying.
