INSTANT POT - Zanzibar Yellow Potatoes/Batata ya Urojo/Raas Wara Bateta
There has been lots of request to do these potatoes in my instant pot. Here you go.
This Zanzibar Yellow Potatoes is street food, it is usually enjoyed as mix with small daal bhajiyas, small bateta wara (known as kachori in Zanzibar), and grated fried muhogo (Yuca) chips and mixed with coconut Chutney makes a complete dish known as Zanzibari Mix. I enjoyed this street food very much growing up as my uncle nicknamed as “Hashnu Muri” used to sell this mix in Zanzibar. Every week when I visited him with my mom, I used to enjoy this mix. Prayers for his soul. INGREDIENTS:
3 Large potatoes peeled and cubed
1 tsp salt
1 tsp fresh green chilli paste
1 tsp lemon or lime juice
3 tbsp all purpose flour/Maida
4 cups water
1 medium raw mango peeeld and cubed
1 tsp turmeric powder
Take a bowl and add the flour, then add 1/2 cup water and whisk to remove any lumps then gradually add more water. 2 cups at this point. Then add salt, green chilli paste and turmeric — whisk and set aside. In the INSTANT POT (electric pressure cooker) add the flour mixture, potatoes, mangoes and additional 2 cups water, (total 4 cups water used). Mix and close the lid. Set the manual mode to cook for 5 minutes and Natural Pressure Release (NPR). Once the pin drops open the lid, you will find that the potatoes are done nicely, but very watery, which is okay as it cools the gravy will thicken in an hour. Keep it covered while cooling. After it has cooled enough enjoy.
NOTE: Raw mango makes this dish event tastier if you don’t have it then add more lemon juice to your taste.
