VEGAN CHICKPEAS  BEAN VEGGIES  QUESADILLA . . NOT REALLY QUESADILLA ,  QUESADILLA comes with two tortilla...one in the in the bottom , the other one one top. But I am cutting it down with my carb ..so all I need is just one tortilla.  However,  the idea definitely come from QUESADILLA. . . If you have leftover vegetable,  this is the perfect way to use it. . . I had some leftover veggies that made Veggies  Rice Roll. .check out my post on that. . . I just warm my veggies add garlic, and jalapeño ..add my chickpeas. Heat through for about 2 minutes. Done. Easy peasy . . Then I just put my one slice of  Vegan cheese in bottom,  add my veggies,  then I add more more slice to hold together.  I use indoor grill,  heat, add little bit of olive oil,  I grill until nice and golden.  Cheese all melted . This bowl of COCONUT CHICKPEA STEW is perfect to warm up on this rainy day ☔️ — This is the perfect #vegan dish when you are feeling like something hearty and creamy. It’s also a great vessel to add in extra veggies you have on hand. La ricetta dei falafel di ceci (English recipe for chickpeas falafel in the comments) la trovate sul mio libro Cucinare i legumi, scritto per @terranuovaedizioni diversi anni fa (9!). Era stato divertente scriverlo e anche organizzare il set fotografico di tutti i piatti, una due-giorni in cucina dopo aver raccolto, in ogni possibile dove, piatti, piattini, scodelle, posate, tovagliato e ammennicoli vari. Le polpette figurano sul piatto che avevo avuto in dono dal Marocco, e sono accompagnate dal mio chutney di pomodoro e sesamo. Dopo aver ammollato 200 g di ceci per 24 ore, li sciacquo, li scolo bene e poi li frullo con uno spicchio d’aglio, una piccola cipolla, due manciate di prezzemolo tritato, due c di cumino, un c di coriandolo in polvere, una presa di semi di finocchio e di curcuma, una macinata di pepe e mezzo cucchiaino scarso di sale; l’impasto deve risultare ben asciutto. Con il composto ben amalgamato formo delle polpettine (ne vengono circa 20) e le lascio riposare per almeno un’ora, poi le friggo finchè dorate. Mi piace giocare con le spezie e la quantità dipende anche dall’intensità di queste, consiglio di assaggiare una puntina d’impasto. Every week or so, in the Yellow Kitchen at work, called as such not because the walls are painted yellow with the urine of my coworkers, but because the walls are painted yellow with yellow paint, the stall of some organic farm appears out of thin air to sell their various products. Grass fed livestock! Organic cheeses and eggs! Used underwear! Oh wait, wrong stall. ~ Every week or so, I pass in front of it and roll my eyes a lil’. For reasons that used to elude me, that booth and all of the banners advertising it at work always mildly annoyed me. ~ Yesterday, I embarked upon my daily water bottle refilling journey and headed to the yellow kitchen. I passed by the stall and heard a faint voice behind me. “Voudrions-vous goûter un bon p’tit fromage, m’sieur.” Would you like to taste a good cheese Sir, he had just asked me, in the Black Tongue of all things! I stopped. My head slowly spun 180 degrees to face my interlocutor. I started walking backwards towards him, head still facing him, my eyes piercing this tiny shirtless old man’s soul with all of their might. ~ He started rubbing cheese with both hands on his hairy deformed nippleless torso in a vain attempt to seduce me, but my will was strong and my moves like Jagger. I tornado kicked the slices of cheese out of filthy hands and twisted my head back into place. He was impressed, confused, and aroused. I was disgusted. I grabbed him by the perineum and threw him into the ceiling, only to be more grossed out by the fact that he did not have any pants either. ~ “Nope, I don’t eat cheese.” I said to the naked man who was twitching in the ceiling, melted cheese dripping from his body… or I hope that it was cheese. … Eugh. I turned around and the stall blew up. But I didn’t look back, because cool guys don’t look at explosions. Sprouting time! There are many benefits to sprouting (legumes, nuts and seeds), including increasing the digestibility of foods, increasing nutrient absorption and decreasing anti-nutrients (naturally occurring compounds that are protective for plants but affect our ability to digest vitamins and minerals). . I mainly sprout chickpeas and lentils (bonus: I buy them organic in bulk for a huge nutritional bang for my buck!). I soak them overnight (or 8 hours), transfer them to a colander to drain, then rinse them a few times a day until they grow little tails. This only takes a day or so for lentils, and 2-3 for chickpeas. . Once sprouted, I mainly eat them raw (salads, hummus, wraps), but I also add them when cooking (vegetables, soups, curries, stir-fries) or toss them with a little oil and spices and bake them for a crispy snack. . Chickpea Winter Minestrone. Monday’s chickpeas working as the backbone of yet another meal, along with onion, garlic, potato, squash, Cavolo Nero, loads of lemon juice and Parmesan ( both the rind used like a stock cube and shaved on top at the end) ooooh and most importantly loads of finely chopped rosemary. I didn’t bother with veg’ stock as the chickpea water had so much flavour anyway. I did slosh on the extra virgin olive oil at the end. What makes a soup a “Minestrone”? Definitely satisfied with this delicious salad 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Salad Bowl Deets👇🏼 ▫️1 bag (6 oz) Baby Spinach Spring Mix ▫️1/2 cup Tricolor Quinoa ▫️2 Zucchini’s, cubed ▫️8-10 Cherry tomatoes, halved ▫️2 Avocados, sliced ▫️1 can (15 oz) Chickpeas, drained ▫️Avocado oil ▫️Smoked paprika ▫️Garlic powder ▫️Lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Set the oven to 400°. Drain and rinse the chickpeas & add to a mixing bowl. Add in avocado oil, smoked paprika, & garlic powder (I honestly just eyeball it & base it off of how flavorful I like it!)
