Did you know you can make pesto with just about any combination of greens? (Don’t tell anyone’s nonna I said that 🤫)
While the #carrottop is a tad bitter on its own—or maybe I’M the bitter one, having always coveted red hair—with the help of any spare herbs you have lying around, or just copious amounts of olive oil, garlic, salt, and some kind of nut/seed to add richness and texture, you are moments away from reaching dip nirvana.

🧀Cheese of any kind is optional, and whether you should include it (assuming you eat cheese in the first place) depends on whether you plan to freeze. Freeze = no cheese. Cheese = no freeze. Pesto freezes brilliantly without cheese, especially if you do it in an ice tray. You can always add cheese on top later👍🏻
🌻Sunflower seeds are a great swap for expensive pine nuts (which go rancid quickly and can give you #pinemouth even when fresh). You can also use nuts of pretty much any kind, and that can be a fun way to mix things up. I recommend trying #almonds and #walnuts 🐿🌰
🌱If you’re low on herb, don’t be afraid to leave the stems on—that’s where a lot of the flavor is. Actually, just throw them in anyway.
🥕No need to include the actual carrots in this, though I’m sure there is a way to make that work. Store them in a jar of water in the fridge to keep them crisp🚰
🍋Add lemon juice if you have it!
💚The texture is up to you. I love a chunky pesto with some tooth to it (swipe 👉🏻 to see) but my man prefers it smooooooth. Good thing he is out of town and can keep his irksome opinions to himself 😂
