Meet Chef Ivan Wibowo, the man behind the first all-day American brunch in the city: Benedict, also known for his contribution in Lewis & Carroll, Burger Project, and his very own Good for Eats, Ohana Semarang, and Cube Creamery alongside his wife, Chef Grace Dharmawan.
Everything started the first time Chef Ivan joined his grandmother cooking for the family. Although it wasn’t really an option at the time, a career in the culinary world had always been on his mind. Growing up with his close ones pursuing career in the engineering, computer science, and medical field, it was a dilemma for him to go for his dream. Chef Ivan ended up getting a Bachelor Degree in Food Science, which granted him the chance to work with internationally recognised sauce brands.
Despite all the experiences he had been gaining, Chef Ivan felt like he needed a change: something more dynamic. He chose to follow his passion by going to the Culinary Institute of America (CIA) and travelled around the globe — working at world renowned restaurants in New York, Sydney, Denmark, London and Holland. Being exposed to new ideas of cooking philosophy, approach and techniques from different kitchens, Chef Ivan had no plan on returning to the homeland. Until his brother invited him to an award night gala dinner in Jakarta that led him to unexpected opportunities and connections. Started with a private dinner with 15 attendants, he kept on getting private dining requests; ranging from family to corporate events — which also came with more opportunities and potential partnerships.
Chef Ivan and Chef Grace believe that engaging with customers is the key: Listen, adapt, and find your way to make things work. Being entrepreneurs have taught them that everything they are doing is a 24-hour commitment, there’s no 9-to-5 because you are on your own. Having to always be on check, creative with plannings and executions: the pair had always enjoyed pop-ups, because to them there is more than just serving a beautiful dish — it’s the chance to interact with your audience and educate them, guide them into better understanding the idea behind your craft so they can appreciate each bite even more. #sukandadjaya at Lewis & Carroll
