Raining non stop so I think it’s fair to say autumn is here 🌧 whipped up this comforting autism’s last dish during the week - really quick and simple, stores and reheats v well too.
I j added sliced onion, mushroom and aubergine to the pan with a tbsp mct oil: Onc beginning to soften added garlic and oregano , then 500ml tomatopassato , then wilted in a heap of spinach. Once wilted, you could add in your beans of choice but for diabetic purposes I prefer to keep the beans separate and add as I make each dish ( eg the veg and sauce is about 10g carbs per potion, then for better accuracy I’ll weigh the kidney beans before serving) - I know a lot of type 1’s struggle carb counting one pot meals like chilli, lasagne , pies etc - try to measure the main carb part and trust yourself to guesstimate is the rest, monitor bloods pre and post so you’ll know for again a trial and error !!
