I have been mulling over this post for almost a week now. The tragic turn of events in Denver at STEM School last week made me hesitate. I was in Denver two weekends ago and wanted to share a phenomenal experience, but did not know how to post happy, positive Denver news when yet another school and community was in crisis. In true Shannon fashion I remain the optimist.
Listen up everyone, in the midst of the chaos and heartbreak, there are still amazing things happening. There are still people who gather as communities, who lift one another up in those communities and believe in the people that are part of their communities. This is the same system I have in my little office at home. Home is where it starts for me!
During this process I have also come to a conclusion...I am NOT an eloquent novelist.....so, shall I share my notes from an amazing work event I attended ? Keep in mind, this took place in DOWNTOWN Denver. This area is practically considered an Urban Desert. There is not a grocery store within a 1 mile radius of this establishment -This is the largest rooftop garden in the US, coming in at 8,000 sq feet, with over 340 Tower Gardens -Colorado IMPORTS 97% of its greens -Waste is reduced with this growing process. Garden to table. This facility provides greens, flowers and herbs to 32 restaurants and 2 (soon to be 3) grocery stores -What is pictured here is Non-GMO and pesticide free -Artificial lighting is only used for seedlings -This aeroponic system uses -10% of the water that conventional gardening uses
