Fennel is a flowering plant species in the carrot family. It is famous for it's licorice taste, and thought to have many positive health effects including, contributing to building and maintaining bone structure and strength.
One cup of fennel contains about 43 milligrams of calcium, which can be helpful for those who don’t consume enough foods high in calcium. Calcium isn’t the only bone-strengthening nutrient found in the bulb. Fennel also contains magnesium, phosphorus and vitamin K, which all play a role in maintaining bone strength. Try it grilled for a sweeter, less licorice-tasting dish.
4 medium fennel bulbs (about 3 pounds total), sliced lengthwise ½ inch thick
3 tablespoons olive oil
Kosher salt, freshly ground pepper
Prepare a grill for medium-high heat. Chop off fennel fronds, save to garnish the finished dish. Peel away the outermost layer from the fennel bulb; it’s tough and fibrous and won’t be good grilled. Toss in olive oil and place on a rimmed baking sheet or directly on grill; season with salt and pepper. Grill fennel until lightly charred, about 4 minutes per side. Enjoy!
