. 🥰Happiest 3rd Birthday to the kid that has mommy and daddy running around in circles with our heads cut off 90% of the time! . 🤣Fun story: My OBGYN and I agreed having a c-section was the best route to take for this pregnancy (for those that know my delivery story from my first pregnancy, you know why a c-section was an absolute must 🙈; it was best not to relive that ordeal 😅). Anyways, I decided to schedule the c-section the day AFTER my birthday because I wanted each of us to have our own special day. BUT wouldn’t you know, this little ham punched his way out a day early ... my water broke the morning of my birthday! . ♥️He was the best birthday gift I’ve ever received! . 🤒 Last week the House of Hotard was hit with the horrible combo of flu and stomach virus... and yes, it was as miserable as it sounds! . 🍲Last weekend I had food prepped a big ole pot of “gumbo”... really a glorified chicken soup because I tried to make it low-fodmap and grain-free (no onions or a proper roux). I froze half of it and left the other half in the fridge for the week. . 😢We only had 1 bowl then got sick while visiting family for Vietnamese New Years and lost our appetite for the next 5 days. We had to throw out the rest along with everything else I prepped in the fridge last week! When food prepping back fires... I hate wasting food 🙈. . Gloried Chicken Soup (aka Low-Fodmap/Grain-Free Gumbo) 🔸heat 4ish tbsp garlic evoo in a large pot 🔸add chopped veggies (I used a big bag of carrots, a whole head of celery, 2 whole fennels, 6 bell peppers, 2 cans of whole tomatoes, a dozen green onions, 1/2 a bunch of parsley) 🔸add seasonings (2 tsp pink salt, 1/2 pepper, 1/8 tsp cayenne) 🔸cook on low for about 1 hour stirring occasionally 🔸in a separate pot, simmer on low 6 chicken breast in water with and 1 tbsp pink salt and 1 tbsp ground ginger for about 25 mins, after 25 mins, turn of stove and let it sit for another 15 mins with the lid on 🔸shred chicken (use your stand mixer; sooo easy!) 🔸add 1 quart of bone broth and chicken & sausage to the big pot 🔸add broth from boiling the chicken until it reaches your desired brothiness, lol 🔸pink salt to taste 🔸simmer for another 1-2 hours 🔸had it with zoodles 🔸let completely cool before freezing . Sounds like a big pot of soup, right? Which is why it hurt to throw away 😢. Here are some fun New Years facts! 🔸Tet is 3 days long 🔸This year is the year of the pig, the zodiac animals cycle every 12 years 🔸 China, Korea, Vietnam, Laos, Singapore and many Asian countries celebrate the Lunar New Year 🔸You’re suppose to clean house before the new year and refrain from cleaning during the 3 days of the new year (oops!) 🔸Children get lucky money (Li Xi) in red envelopes! #collegefund 🔸It is believed that Tet will determine the path of the coming year 🔸Old debts should be paid 🔸Borrowing during the new year means you’ll be poor all year but lending means you’re giving away your luck 🔸Our must eat lucky food: (bang chung) sticky rice cakes made with glutinous rice, mung beans, and pork wrapped and steamed in banana leaves. . ⚜️Whether you boycott bowl or superbowl, buffalo strips make a good snack! These are actually the chicken nuggets I made a few weeks ago and froze. I reheated him then tossed them in @thenewprimal mild buffalo sauce and we’re dipping with @primalkitchenfoods ranch dressing. 🙌🏻 . Batter ingredients 🔸3/4 cup grated parmesan (sub with 1/3 cup cassava flour, flaxseed, and nutritional yeast to stay paleo/whole30) 🔸1/4 cup almond flour (cassava flour to be nut free; I use @terrasoul) 🔸1/4 cup ground flax seed (helps bind) 🔸1/4 cup non-fortified nutritional yeast 🔸1 tsp cumin 🔸1 tsp onion powder 🔸1 tsp garlic powder 🔸1 tsp oregano 🔸1 tsp pink salt 🔸1/2 tsp Black pepper . Instructions 🔸cut chicken into nugget sizes 🔸dip in batter mixture 1st 🔸dip in eggs 🔸re-dip in batter 🔸air fry at 350 degrees for 7-8 mins on both sides or until cooked through . To freeze: 🔸Let the nuggets cool completely 🔸Line a baking sheet with parchment then lay the nuggets down. 🔸Saran wrap the top 🔸Freeze for about 1-2 hours 🔸Remove from baking pan and place in a freezer bag or equivalent container. 🔸Freezing it this way makes it easier to pull them apart when you want to reheat them. They won’t stick together! 🔸I reheat mine in the air fryer on a low setting. Mindfulness not Perfection. 1 meal a week with no restrictions. Roughly 5% Freedom; 95% Clean. . ➡️Check my stories later tonight for how my body reacts... historically, eating like this gives me a lot of pain and makes me bloat beyond belief (which is why I’ve stayed away for so long), BUT I took @globalhealingcenter digestive enzymes, so I’m hoping real hard it helps with my symptoms. . 🙌🏻This was my first time making whole30 meatloaf and it’s already a family favorite! This recipe is also freezer friendly (if it last that long)! We had it with mash potatoes and roasted brussel sprouts. . Adapted @thedefineddish meatloaf to be low-fodmap and nut free for my son 🔸6-7 green onions (only the green part) 🔸2 tbsp @fourthandheart ghee 🔸1/2 tsp dried thyme 🔸1 tbsp tomato paste 🔸1 tbsp @bigtreefarmsbali coconut aminos 🔸2 lbs ground turkey 🔸2 eggs 🔸1/2 cup @terrasoul cassava flour 🔸pink salt and pepper to taste 🔸sauté onions in ghee with thyme and tomato paste 🔸let cool then mix with other ingredients 🔸shape the mix into a loaf shape on a parchment lined sheet pan 🔸mix sauce mixture and paste on top of the meat loaf 🔸bake at 350 for 1 hour . Top sauce mixture: 🔸1/2 cup tomato sauce 🔸1 tbsp tomato paste 🔸1 tbsp @bigtreefarmsbali coconut aminos 🔸1 tbsp garlic evoo 🔸1 tsp yellow mustard 🔸1 tsp hot sauce 🔸salt and pepper to taste . Whole30 mash (sorry I didn’t measure anything 🙈; just kind of did it to taste) 🔸a bag of @365bywholefoods potatoes potatoes 🔸maybe 2ish tbsp of @fourthandheart ghee 🔸maybe 1ish tbsp oh garlic EVOO 🔸chicken bone broth (not sure how much, but you’ll need a lot. Just pour until the potatoes are smooth) 🔸pink salt and pepper to taste . To freeze: 🔸Slice the meatloaf and let cool completely 🔸Line a baking sheet with parchment then lay the slices down 🔸Saran wrap the top 🔸Freeze for about 1-2 hours 🔸Remove from baking pan and place in a freezer bag or equivalent container

. 🙈Cute family photo right? Except I forgot to suck in my bloat... At this point, I was mostly grain-free & avoided most added sugars but it seemed like everything I ate made me hurt & blow up. . 🙋🏻‍♀️So I decided to participate in January’s whole30 to help reduce my severe bloating & pain. Admittedly, whole30 wasn’t very different than my normal diet. In addition to grains, sweeteners, & alcohol... I eliminated legumes, dairy, baked goods (including waffled & pancakes), and most additives. I also naturally lower my nut intake because baked goods weren’t allowed. . 🙌🏻The results: I focused purely on non-scale victories; calorie restriction & weight loss was never considered. After 2 weeks I finally felt normal again. My abdomen went from 34 inches to 28 inches 🤯. My confidence slowly started to come back, and I wasn’t afraid to wear something that wasn’t oversized. . Notes & Takeaways: 🔸Tiger blood is a legit real thing. I started feeling more energy. This tired momma wasn’t as tired! 🔸At the midway point I started limiting high-fodmap foods in my diet because I still had stomach pains. This helped! I wasn’t overly strict with this because it severely limited my food options. 🔸Surprisingly, eating protein & fat as my preworkout wasn’t bad at all. I felt like I had sustained energy throughout the whole workout, similar to my workouts when Keto. 🔸By day 30, I haven’t had any pain or bloat return! . So what now, Tami?! Now the real work begins... finding my food triggers, while also allowing myself food freedoms. Mindfulness. Not. Perfection. 🔸Stop taking digestive enzymes daily. I firmly believe these babies work for me, but they mask my GI symptoms, so in order to get accurate results I have to stop taking them daily 🔸Continue to eat whole30 approved ingredients, but adding baked goods (i.e. more nuts). I’m looking at you, waffles! Track symptoms for at least a week. 🔸Slowly reintroduce low-fodmap, non-whole30 foods & track symptoms 🔸Slowly reintroduce high-fodmap foods & track results 🔸Allow myself 1 meal a week with no restrictions. This will be the only time I take digestive enzymes. Mindfulness. Not. Perfection. . ➡️Check my whole30 highlight

. 😳I was single momming most of this past week while hubs was away for a work training. To help me slay the week, I did a ton of food prepping last weekend to make solo week go more smoothly. . This Korean “Beef” bowl was one of the meals I prepped for the freezer. Soo good! 🔸Cook 2 lbs of ground turkey in garlic EVOO and green onions on low-medium 🔸mix in 2 tbsp @redboatfishsauce and 1/2 cup of @bigtreefarmsbali coconut animos 🔸add in 1/2 tsp of salt 🔸summer on low until all liquid is cooked 🔸to freeze, lay cooled meat flat on a lined sheet pan and freeze for about 1 hour, then remove from freezer and put in freezer bag 🔸when you’re ready to eat, reheat and serve! We had it with cauliflower rice (not low-fodmap), cucumbers, leafy greens, and a soft boiled egg. . ➡️Meal prep tip: I freeze some of the food I prep for the latter part of the week. . 💜💚💛Toast Tuesday! Thought I’d get a little festive with yesterday brunch. Counting the days until I can have a piece of king cake... 8 days! . 🙌🏻@thedefineddish took over @whole30recipes this past week and in her closing statement she said “mindfulness not perfection”. I felt like she was speaking directly to me. I’ve had great results from just 21 days on whole 30. Bloat relief, less pain, more energy. The old Tami would have continued to ride the whole 30 train indefinitely (like I did with Keto). I’d continue to restrict myself unnecessarily. Striving to stay strict at all costs. Perfection. . 😋The new Tami however knows better! I’ll continue documenting in my food diary, slowly adding new foods, tracking results, and discovering food triggers along the way. It makes meal prepping take longer than it should, but the kids genuinely love helping me the kitchen. . 🙈My poor hubs. By default, he’s basically been on every single diet I’ve tried to help me with my GI issues. He does veer from the path occasionally, but for the most part he eats what I eat. . 🙌🏻 @katescarlata said it perfectly “don’t over restrict your diet unnecessarily”, which is exactly what I was doing while on the Keto diet. . 🚫Using @whole30 along with a low-fodmap diet as my starting point to finding my food triggers. First eliminate all foods with the highest possibly of triggers, then slowly reincorporate them. . 🍠I’ve been lovin’ on sweet potatoes lately. When I saw @whole30recipes post a buffalo chicken stuffed sweet potato recipe, I was 🥰. . Hit @whole30recipes for original recipe!
