Need a quick, delicious and healthy side dish? These roasted carrots with toasted nuts and goat cheese cover all those bases. It couldn’t be easier: Preheat the oven to 450. Peel Ib. of carrots and quarter them and them cut them in half crosswise. Put them on a baking sheet and toss them with 1 tbsp of avocado oil, season with salt and pepper. Roast for 30 minutes, tossing halfway through. Meanwhile, toast 1/3 cup of walnuts in the toaster oven and chop up 1/4 cup of parsley. Toss the carrots with the nuts and parsley. Put them in a serving bowl and sprinkle goat cheese crumbles on top. YOU MUST MAKE THIS!! I’m not usually a yeller, but this turned out So. Darn. Good. I showed you how I made this cauli-rice “risotto” and salmon in my stories and it couldn’t be faster or easier. It’s just @cecesveggieco riced cauliflower, cream, parmesan, parsley and some spices. If you don’t do dairy, you could use nutpods and nutritional yeast. The salmon I basted with @chosenfoods avocado oil and spices and cooked it for 11 minutes and 425. I will be making this again. It tried to sleet, hail and snow today. Uh, no. I live in Houston. I don’t do those. But I do do taco salads. Make it ➡️➡️ Sauté sliced a onion and a sliced bell pepper in some avocado oil until golden. Cook some grass-fed beef until cooked through and add a heaping tbsp of taco seasoning. Then load your bowl with lactose free sour cream, avocado, pico and pickled onions.
